Tomatoes are the most common non-starchy vegetable in American diets, and may play an important role in maintaining health and reducing risk of disease. Rich content of lycopene, a powerful antioxidant, is understood to be at the root of the tomato`s wholesomeness. Bioavailability of the antioxidant increases with the cooking and processing of tomatoes (an uncommon characteristic among plant foods). The consumption of tomatoes has been associated with decreased risk of cardiovascular disease, osteoporosis, cognitive dysfunction, and skin damage caused by exposure to UV light.
